2. On ketchup

Ketchup comes from fish sauce (in Cantonese, 茄汁 ke zap), common in the South China Seas where European sailors encountered the sauce and brought it back with them (along with the name) to Europe. During its evolution in Europe, it lost fish and eventually gained (after several intermediary varieties including mushrooms) tomatoes, which leads to the iconic red ketchup that we have today.



3. Flora

Dame’s rocket (Hesperis matronalis) and yellow rocket (Barbarea vulgaris) are in the Brassicacae family, commonly known as mustards. Native to Eurasia, dame’s rocket and yellow rocket were introduced to North American in the 1800s and are often considered invasive species.
    Since mustard varieties are found in many areas of Eurasia, culinary uses of mustard have long histories across the Asia, Africa, and Europe. Mustard paste is recorded to be used in China in the Zhou Dynasty (1046–256 BCE), while the Romans developed the use of mustard as a condiment in Europe as early as the 1st century CE.
